MAZESOBA is a type of soupless ramen that originated in Japan. It is a dish of spicy minced meat and a variety of other ingredients mixed together. The extra-thick chewy noodles and ingredients are a perfect match, and the fact that it is soupless makes it ideal for food delivery.

Kokoro's MAZESOBA is a type of noodle dish that can be made with a wide variety of ingredients and endless arrangements. Unlike aburasoba, mazesoba is served by mixing the ingredients and extra-thick glutinous noodles thoroughly.

Fascinated by mazesoba, which originated in Nagoya, Mr. Takuma Ishikawa, founder of Kokoro, opened his first restaurant in Ookayama, Ota-ku, Tokyo, in January 2014 with the hope that Tokyoites would try mazesoba, which was not well known at the time.

The first shop was said to be in a difficult location for business, far from the nearest station (Ookayama Station), where many ramen stores had opened and disappeared, but it quickly established itself as a thriving store thanks to its friendly customer service and outstanding products.
